Moroccan Hot Dog Charcuterie
Preserved Lemon and Tomato Chutney
1 red onion chopped, 2-3 minced garlic, 2-3 tbsp. olive oil, 1 medium
carton cherry tomatoes, 1 diced preserved lemon (remove seeds), 1 small can dice
tomatoes, ¼ cup apple cider vinegar, ½ cup sweetener of your choice (sugar, Swerve,
Splenda), pinch or more of chili flakes, 4 tbsp. chopped parsley,10 black pitted
olives.
Sauté red onion and minced garlic until soft, then add the
rest of the ingredients and simmer down until nice and pulpy, about 40-60
minutes on low heat. Perfecto on
Harissa Onions
Slice up one onion and put into a pan with a little butter
or olive oil. Sauté until soft, then add
a generous tbsp. or 2 of Harissa Paste and stir. If you are making hot dogs, add wieners to the pan with onions and harissa to warm through. Put onions aside into a serving bowl.
Condiment suggestions for a succulent mess of hot dog happiness: Hummus, harissa mayo, cheese of course, favorite wiener or sausage, pickles, tomatoes, fluffy bun, or in this case a couple of low carb pieces of bread, harissa onions, preserved lemon tomato chutney.
