Low Fat Hash - too die for and so delish...

OK - this is really delish and great for the figure. It's loaded with vegetables.

Spray a frying pan with Pam and turn the element on to high/med heat. Then saute 1/4 of a onion, chopped up, with 1/4 cup of marinated artichokes. Then add 2/3rd cup of veggie ground round (St. Yves) and 2 cups of Tara's prepared Spaghetti Squash Casserole (see below). Stir for a minute to warm through, then add 6 tbsp. of shredded Parmesan or Asiago cheese. I like that the cheese melts and you can scrape the bits off the pan to give this hash a little savory crunch. Put onto a plate and season with pepper.

Spaghetti Squash Casserole. Boil a spaghetti squash on medium then low heat for an hour. Take out of pot and cool. Split open length wise and remove the seeds. Then run the tips of a fork down the flesh of the squash and you will get spaghetti like strands. Put into a casserole dish. If the squash seems too moist, dry it out in the oven for about 10 minutes at 350 degrees, then add 1 cup of low fat pasta sauce and sprinkle with a little Parmesan. Season with salt and pepper and bake in the oven for 20 minutes at 350 degrees. Yummy!
