Strawberry Blue Cheese Organic Salad with Pesto Vinegrette

Probably everyone in the world already knows about the marriage with strawberries and blue cheese together - well I just discovered it last night when I tossed a last minute salad together for friends that were coming over for a BBQ. Divine. As usual I am obsessed with vinaigrette's. To me, they are incomparable and contain all of the elements that suit my Gemini nature. A little sweet, vinegary, earthy, and zingy!

Toss about 8 cups of nice organic lettuce into a bowl and slices big succulent strawberries into it. Then add some almonds, I had 1/2 cup and crumble in about another 1/2 cup of blue cheese. The cheese next to the strawberries look really pretty and picturesque.

Vinaigrette - I only had a little more than a 1/4 cup of olive oil, I do like to add more, but I added two rounded tbsp. of pesto, 1/4 cup of apple cider vinegar, and 4 packs of splenda, or you can add sugar to taste, salt and pepper.

Pour it over the salad just before serving and voila - to die for!

Perhaps another - though knee weekening Moussaka

Oh my. My knees gave out tonight. God I looked completely stupid lying on the floor with hamburger all over my face. Nevertheless, I found a little recipe for Low Carb Moussaka and altered it only because I was too lazy to read the rest of the recipe:

1 lb. of hamburger layered in an 8 by 8 casserole. Add chopped onion. You can saute, but I actually perfered a little crunch. Bake an entire eggplant, sliced and swipped with a little olive oil. Layer and bake for 30 minutes. Put over top of the hamburger casserole and onion, then add 1/4 cup of tomato sauce, 1 cup of cream, 1/4 cup of parmesan, and three eggs, 1 tsp. of cinnamon, 1 tsp. of nutmeg, pepper, salt, and what else? How bout a glass of something? Cheers.
