Orange and Red Onion Salad

I love simple flavours, and this salad just so happens to be one of my most favourite. 

Peel 2 oranges and cut up into chunks.  As well cut up 1 roma tomato.  Put the orange chunks and the tomato into a bowl and liberally sprinkle with salt and cover and put aside for a couple of hours to allow the juices to come out of the fruit and mingle - don't refrigerate however.  Once the salad is ready for assembling, chop up some black olives and a few slices of red onion to add.  Wash some gorgeous and crispy romaine lettuce and layer on a beautiful flat serving plate with some chopped up olives - I like to use about a cup.  Finally before serving, add 1/2 cup of olive oil to the tomato and orange mixture and stir.  Pour over the romaine lettuce and olives and serve.  Simply divine.
