Quick Cheddar & Dill Loaf

This is easy peasy quick and cheesy.  Perfect for a snack with some cold cuts or to serve with dinner.

3 cups of flour, 3 tbsp. sugar, 3 tsp. baking powder, 1 cup of cheddar, grated, 1 cup of milk, 1 egg, 1 1/2 tsp. dried dill.

Add the dry ingredients and cheese together, then add the wet ingredients and mix up.  Put into a greased loaf pan and bake at 350 degrees for about 50 minutes.

Celery Root Puree

OK, you will go into joy orbit when you eat this!  It is BEYOND amazing and is also the ultimate side dish and comfort food.  I'd enjoyed celery root puree a few weeks back when my friend and I went out for her birthday lunch.  I'd ordered a small plate of beer braised short ribs with celery root puree.  The texture of the celery root puree is silky and oh so very satisfying and goes very well I would imagine with any rich meat dish.  You could also just eat it on its own.  So here is the recipe:

3 tbsp. olive oil, 3 cloves garlic, thinly sliced, 1 medium leek, white part only, thinly sliced, 2 1/2 lb. of celery root, peeled and cut into 1 " pieces, 3 1/2 cups of chicken stock, salt and pepper.

So cook up your celery root, like you would for making mashed potatoes, in a pot of water, and cook until tender....about 30 minutes.  Drain and cool.  Then I put the oil in the same pot, added the leeks and returned the celery root and cooked until leeks were tender.  Add the chicken broth and then mash up a bit.  Throw into your blender and cream away.  Taste and then add salt and pepper.

TO DIE FOR!!!!!  Low calorie and low carb my friends.

Tomato Saucy and Fish Scalloped Potatoes

Oh, my God this was amazing. I had left over cod,  a can of tomato soup and some potatoes.  So I made scalloped potatoes with fish and tomato soup.

I first peeled and sliced about 8 potatoes in a buttered casserole dish with one big sliced onion.  Then in a pot over medium heat, I made a roux, 3 tbsp. of melted butter, 1/2 cup of flour, stir, then add 2 cups of milk and whisk until mixed.  Let thicken. I added to it, one tin of tomato soup, 1/2 package of cream cheese and 1/2 cup of parmesan cheese.  Once the mixture is thickened, pour over potatoes and season with salt, pepper and most importantly with SMOKED PAPRIKA.  Put the fish in and mix around and top with more Parmesan and smoked paprika and pepper.  Bake for 1 hour and serve.  You will be in heaven it is that good!
